Prince Edward Island Mussels in White Wine and Garlic
Prince Edward Island is famous for its sweet, plump mussels. This recipe is simple yet bursting with flavor.
Ingredients:
- 2 lbs PEI mussels, cleaned and debearded
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup dry white wine
- 1 cup vegetable broth or water
- 2 tbsp butter
- Fresh parsley, chopped
- Salt and pepper to taste
- Lemon wedges (for serving)
Instructions:
- In a large pot, heat olive oil over medium heat. Add garlic and cook for 1-2 minutes until fragrant.
- Add white wine and vegetable broth to the pot, bringing it to a boil.
- Add mussels to the pot and cover. Let them steam for 5-7 minutes until the mussels have opened. Discard any mussels that don’t open.
- Stir in butter and fresh parsley, then season with salt and pepper.
- Serve the mussels in their broth with lemon wedges on the side for a refreshing touch.
