Prince Edward Island Mussels in White Wine and Garlic

Prince Edward Island is famous for its sweet, plump mussels. This recipe is simple yet bursting with flavor.

Ingredients:

  • 2 lbs PEI mussels, cleaned and debearded
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup dry white wine
  • 1 cup vegetable broth or water
  • 2 tbsp butter
  • Fresh parsley, chopped
  • Salt and pepper to taste
  • Lemon wedges (for serving)

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add garlic and cook for 1-2 minutes until fragrant.
  2. Add white wine and vegetable broth to the pot, bringing it to a boil.
  3. Add mussels to the pot and cover. Let them steam for 5-7 minutes until the mussels have opened. Discard any mussels that don’t open.
  4. Stir in butter and fresh parsley, then season with salt and pepper.
  5. Serve the mussels in their broth with lemon wedges on the side for a refreshing touch.
